Ingredients
1 lb (450g) shrimp, peeled and deveined
1 lime, juiced
1/4 cup fresh cilantro, chopped
8 Ezekiel tortillas (sprouted grain tortillas)
1 medium red onion, thinly sliced
1 large avocado, diced
1 red bell pepper, thinly sliced
2 cups purple cabbage, thinly sliced
1 cup corn kernels (fresh, canned, or frozen and thawed)
1 tbsp olive oil
1 tsp cumin
1 tsp paprika
Salt and pepper to taste
Instructions:
Marinate the Shrimp:
In a bowl, combine the shrimp, lime juice, half of the chopped cilantro, cumin, paprika, salt, and pepper. Let it marinate for 15 minutes.
Prepare the Vegetables:
While the shrimp is marinating, prepare the vegetables. Thinly slice the red onion, red bell pepper, and purple cabbage. Dice the avocado and set aside.
Cook the Shrimp:
