Ingredients

  • 1 lb (450g) shrimp, peeled and deveined

  • 1 lime, juiced

  • 1/4 cup fresh cilantro, chopped

  • 8 Ezekiel tortillas (sprouted grain tortillas)

  • 1 medium red onion, thinly sliced

  • 1 large avocado, diced

  • 1 red bell pepper, thinly sliced

  • 2 cups purple cabbage, thinly sliced

  • 1 cup corn kernels (fresh, canned, or frozen and thawed)

  • 1 tbsp olive oil

  • 1 tsp cumin

  • 1 tsp paprika

  • Salt and pepper to taste


 Instructions:

  1. Marinate the Shrimp:

    • In a bowl, combine the shrimp, lime juice, half of the chopped cilantro, cumin, paprika, salt, and pepper. Let it marinate for 15 minutes.

  2. Prepare the Vegetables:

    • While the shrimp is marinating, prepare the vegetables. Thinly slice the red onion, red bell pepper, and purple cabbage. Dice the avocado and set aside.

  3. Cook the Shrimp:

    • Heat the olive oil in a large skillet over medium-high heat.

    • Add the marinated shrimp and cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque. Remove from heat.

  4. Warm the Tortillas:

    • In a separate skillet, warm the Ezekiel tortillas over medium heat for about 1 minute on each side, until they are pliable.

  5. Assemble the Tacos:

    • Place a generous portion of shrimp on each tortilla.

    • Top with slices of red onion, red bell pepper, purple cabbage, corn kernels, and diced avocado.

    • Sprinkle with the remaining cilantro.

  6. Serve:

    • Serve the shrimp tacos immediately with lime wedges on the side for extra zest.
