Ingredients:
4 large eggs
1 cup egg whites
1/2 cup diced ham
1/4 cup diced red bell pepper
1/4 cup diced pineapple
1/4 cup diced onion
1/4 cup shredded cheese (such as cheddar or mozzarella)
1 tablespoon chopped Italian parsley
Salt and pepper, to taste
Cooking spray or olive oil
Instructions:
In a bowl, whisk together the eggs and egg whites until well combined. Season with salt and pepper to taste.
Heat a non-stick skillet over medium heat and lightly coat it with cooking spray or olive oil.
Pour a thin layer of the egg mixture into the skillet, tilting the pan to spread it out evenly. Cook for 2-3 minutes, or until the bottom is set and lightly golden.
