  • Ingredients:

    • 4 large eggs

    • 1 cup egg whites

    • 1/2 cup diced ham

    • 1/4 cup diced red bell pepper

    • 1/4 cup diced pineapple

    • 1/4 cup diced onion

    • 1/4 cup shredded cheese (such as cheddar or mozzarella)

    • 1 tablespoon chopped Italian parsley

    • Salt and pepper, to taste

    • Cooking spray or olive oil

Instructions:

  1. In a bowl, whisk together the eggs and egg whites until well combined. Season with salt and pepper to taste.

  2. Heat a non-stick skillet over medium heat and lightly coat it with cooking spray or olive oil.

  3. Pour a thin layer of the egg mixture into the skillet, tilting the pan to spread it out evenly. Cook for 2-3 minutes, or until the bottom is set and lightly golden.

  4. Sprinkle the diced ham, red bell pepper, pineapple, and onion evenly over one half of the omelette. Sprinkle the shredded cheese on top.

  5. Using a spatula, carefully fold the other half of the omelette over the filling to create a half-moon shape. Cook for another 2-3 minutes, or until the cheese is melted and the filling is heated through.

  6. Slide the omelette onto a plate and garnish with chopped Italian parsley. Serve hot and enjoy your protein-packed Hawaiian omelette!

This recipe provides over 35g of protein from the eggs, egg whites, ham, and cheese, making it a nutritious and satisfying meal option for busy moms.
