2 tablespoons Thai red curry paste
2 tablespoons low-sodium soy sauce
2 tablespoons honey or maple syrup
1 tablespoon rice vinegar
2 cloves garlic, minced
1 tablespoon grated fresh ginger
1 tablespoon sesame oil
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 small red onion, thinly sliced
1 cup snap peas, trimmed
1 tablespoon sesame seeds, for garnish
Fresh cilantro, for garnish
Cooked brown rice, for serving (optional)
Instructions:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease with olive oil.
