Ingredients

4 boneless ribeye steaks, about 6 ounces each

  • Salt and pepper, to taste

  • 2 tablespoons olive oil

For the Chimichurri Sauce:

  • 1 cup fresh parsley, finely chopped

  • 1/4 cup fresh cilantro, finely chopped

  • 3 cloves garlic, minced

  • 2 tablespoons red wine vinegar

  • 1/4 cup olive oil

  • 1 tablespoon fresh lemon juice

  • 1/2 teaspoon red pepper flakes

  • Salt and pepper, to taste


Instructions:

  1. Preheat your grill or grill pan over medium-high heat.

  2. Season the ribeye steaks generously with salt and pepper on both sides. Drizzle each steak with a bit of olive oil and rub to coat evenly.

  3. In a small bowl, combine all the ingredients for the chimichurri sauce: parsley, cilantro, minced garlic, red wine vinegar, olive oil, lemon juice, red pepper flakes, salt, and pepper. Stir well to combine and set aside.

  4. Once the grill is hot, place the steaks on the grill and cook for about 4-5 minutes per side for medium-rare, or until desired doneness is reached. Remove the steaks from the grill and let them rest for a few minutes.

  5. While the steaks are resting, give the chimichurri sauce a final stir.
